Lefse is a Velheim desert similar to a well-cooked pancake but with the added sweetness of a special butter added on top of the dish once it is finished. A dark brown color, the treat has several possible origins but is tightly linked to Svele, though Lefse is generally considered the more sophisticated of the two dishes for the use of cinnamon on its creation. It crumbles easily in the mouth despite its dry texture.
Lefse has a long history and one closely associated with its sister pastry, Svele. The traditional origin for Lefse is said to have begun with the Hedrylli Empire. Raiding near and far throughout the 100 years up until the Cataclysm, their introduction to sugar after reaching areas of Ithania allowed them to create the pancake, still found in Aloria today, before later diversifying them into the Lefse and Svele. However, Imperial and Elven scholars tie the two baked goods back to the Elven Empire. The slaves kept by the Empire were fed a variety of inexpensive or easy-to-make food, one of which was a large flat pastry cut into slices for the slaves to eat. While eventually this went out of style as an “excessive luxury”, these scholars claim the Velheim got it from fleeing slaves and adopted it for themselves. Whatever the true origin, Svele and Lefse were ultimately first recorded for certain by kingdoms in the Regalian Archipelago interacting with Velheim traders. Due to the subsequent Skagger Wars, Lefse never caught on anywhere outside of the Velheim north of the Regalian Archipelago and other Velheim areas of Aloria. Within the past few years however, Lefse has begun to make its way south to Calemberg and Opper Calem where it is eaten as an upper class treat while the Velheim people also similarly consider it a treat for upper classes and notable figures due to the inclusion of southern trade goods in its creation. Unfortunately, the Burning of the North has put a dent in its popularity but only time will tell how long people can keep their hands off the sweet and simple treat.
To make Lefse, first the dry ingredients of salt, sugar, flour as well as the warm butter need to be added together into a bowl and stirred together well. Afterward, the wet ingredients of buttermilk, milk and eggs need to be added to the dry ingredients. The whole mixture should then be mixed together before it can be poured as portions onto a pan to be cooked, with a flip to ensure it is cooked on both sides. Once both sides are brown, it is removed it from the pan. Meanwhile, a quarter cup of sugar and a quarter teaspoon of cinnamon should be mixed together to form the cinnamon-sugar butter that then goes on the top of the pastry. The whole dish should then be served when hot.
- Lefse looks similar to the average pancake though overall has a drier texture. It is also a dark brown color, while the special butter on top is a smooth lighter brown.

- Sometimes on children’s birthdays, in lieu of traditional southern idea of birthday cakes, Velheim cooks stack several Lefse together with the special butter in between and on top to form a layered Lefse delight.
